Napa cabbage is the main ingredient of Baechu-kimchi (배추김치), the most common type of kimchi. Baechu-kimchi is made by fermenting salted napa cabbages with Korean radish, aromatic vegetables, jeotgal (salted seafood), gochugaru (chili powder) and various seasonings. It is also the dish people commonly refer to, whenever they bring up the topic of kimchi despite the various kinds of kimchi available in Korean cuisine.
